There’s nothing more frustrating at dinner time than finding out the knife you have isn’t going to cut your meat! In a restaurant this can be fixed. In a friend’s home, this might be embarrassing. In your own home – this can be fixed tomorrow! If you have never had decent kitchen knives, get yourself a set before your next dinner party.
For those of you who have money to burn and space to use, you can do what Martha Stewart did in her Connecticut home remodel a few years ago. She designed special cabinetry just for her expensive cutlery. These drawers were large enough so that the knives were placed flat, and had plenty of room to breathe. They weren’t huddled together in one of those wooden blocks on the kitchen counter.
Even though this is the ideal way to keep high end cutlery in perfect condition for decades and decades, in the real world, most people just don’t have the room for this kind of luxury.
With the economy tanking, prices for everything have dropped dramatically. This is a good time to buy something like this. There are some good deals out there, you just have to know what you’re looking for. Depending on how much you cook and entertain, or even how often, should help you decide exactly what kind of knives to buy in the set you are looking for.
A decent set of knives can be found for around $100. A superb set of knives is going to set you back a few thousand dollars. If you tend to cook fairly simple meals, or maybe you are a vegetarian, you will need to decide how you plan on using the knives before selecting which ones to buy.
Most sets are fairly standard. A knife with a serrated edge, one for filleting fish, a paring knife, an all purpose chopping blade, and perhaps a butcher knife (meat cleaver). However, if you don’t fillet fish and you don’t dissect whole chickens, this may not be the best set for you, no matter how great a deal it looks like.
If you do cook a lot of meat, you may very well need that industrial size butcher blade but if you use a food processor to cut up veggies, you might be able to get away with only one paring knife and one chopping blade.
Learn how to find quality, too. Quality is all about the construction, and good construction means the knife has one single piece of forged metal running the entire length – this is the tang. The blade is actually the front portion of the tang, and the section inside the handle is the back portion. Without this one single piece construction, you have a good chance of breaking the knife in two with something as simple as chopping nuts or placing too much pressure in dissecting a chicken bone.
